Spicy Shrimp and Pasta Casserole Recipe

Ingredients:

  • Butter, for greasing
  • 2 eggs
  • 1 1/2 cups half-and-half
  • 1 cup plain yogurt
  • 1/2 cup shredded Swiss cheese
  • 1/3 cup crumbled feta cheese
  • 1/3 cup chopped fresh parsley leaves
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 9 ounces angel hair pasta, cooked and drained
  • 16 ounces mild salsa
  • 2 cups cooked shrimp
  • 1/2 cup shredded Monterey Jack cheese

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 by 8-inch baking dish with butter.

  2. In a large bowl, combine the eggs, half-and-half, plain yogurt, Swiss cheese, feta cheese, parsley, basil, and oregano. Mix until thoroughly blended.

  3. Spread half of the cooked angel hair pasta evenly over the bottom of the prepared baking dish.

  4. Layer with the salsa, spreading it evenly over the pasta.

  5. Arrange half of the cooked shrimp over the salsa layer, then sprinkle with half of the shredded Monterey Jack cheese.

  6. Repeat with another layer of pasta, followed by the remaining shrimp.

  7. Pour the egg mixture evenly over the casserole.

  8. Bake in the preheated oven for 30 minutes or until the casserole is bubbly and the top is lightly golden.

  9. Let the casserole stand for 10 minutes before serving.
