Grilled Shrimp with Shrimp Paste Marinade
Ingredients:
For the Chicken Wings:
- 6 pieces chicken wings
For the Spice Paste:

- 3 shallots
- 3 garlic cloves
- 2 candlenuts
- 1 thumb-sized piece of turmeric
- 1 tablespoon shrimp paste (Cinta Puger brand)
- Salt to taste
For the Aromatics:
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 1 bay leaf
For the Basting Sauce:
- 1 shallot, crushed
- 1 garlic clove, crushed
- 1 teaspoon white pepper powder
- 1 teaspoon ground coriander
- Brown sugar to taste
- Salt to taste
- Sweet soy sauce to taste
- A little water
Instructions:

Prepare the Chicken Wings:
- Clean the chicken wings thoroughly and set aside.

Cook the Wings:
- In a pot, bring water to a boil and add the spice paste. Let it simmer to infuse the flavors.
- Add the chicken wings to the pot along with the kaffir lime leaves, lemongrass, and bay leaf. Stir well and cook until the water reduces and the wings are almost cooked through. Turn off the heat and let it sit for a moment.

Prepare the Basting Sauce:
- Mix the crushed shallot and garlic with white pepper powder, ground coriander, brown sugar, salt, sweet soy sauce, and a little water to create a smooth basting sauce.

Baste the Wings:
- Brush the cooked chicken wings with the basting sauce, making sure they are well-coated.

Grill the Wings:
- Preheat a grill pan over medium heat. Grease the pan with a little margarine before grilling each batch.
- Grill the wings, turning occasionally, until they are fully cooked and have a nice char. Be attentive to avoid burning.
