Spicy Smoked Skate Fish with Tauco Sauce

Ikan Pari Masak Tauco Pedas (Spicy Skipped Mackerel)

Ingredients:

  • 1/2 kg smoked skate fish (ikan pari asap)
  • 2 tablespoons tauco (fermented soybeans)
  • 1 tablespoon Saori sauce
  • 3 cloves garlic, minced
  • 5 shallots, sliced
  • Green onions, chopped
  • 2 finger-lengths of galangal (laos), smashed
  • A handful of bird’s eye chilies (cabe rawit), to taste
  • 1 green tomato, diced
  • Sugar, to taste
  • Salt, to taste
  • Sufficient water
  • Oil for sautéing
  • Soy sauce (optional)

Instructions:

  1. Prepare the Fish: Begin by soaking the smoked skate fish in hot water for a few minutes to soften it. After that, remove and set aside to drain.

  2. Slice the Ingredients: Carefully slice all the ingredients: the bird’s eye chilies, garlic, shallots, green onions, and the green tomato. This will help release their flavors during cooking.

  3. Sauté the Aromatics: In a skillet, heat some oil over medium heat. Add all the sliced ingredients along with the smashed galangal. Sauté until the mixture becomes fragrant and the shallots turn translucent.

  4. Combine with Seasonings: Pour in sufficient water, then add the sugar, salt, soy sauce (if using), and the tauco. Stir the mixture well and let it come to a boil. Taste the broth and adjust the seasoning as needed.

  5. Add the Fish: Once the broth is boiling, gently add the soaked smoked skate fish into the skillet. Cook until the fish absorbs the flavors and the liquid reduces, allowing the spices to meld beautifully.
