  8. Add mashed eggplant: Incorporate the mashed eggplant into the skillet mixture and stir until slightly thickened, about 5 minutes.
  9. Season and garnish: Remove the skillet from heat. Stir in chopped cilantro and season with salt and pepper according to your taste preferences.
