Bawal Mercon: Spicy Snapper Delight

Ingredients:

  • 1 whole snapper (bawal)
  • Cooking oil (for frying)
  • 100 grams of chili (cabe jablay)
  • 1 tomato
  • 9 shallots (bawang merah)
  • 3 cloves of garlic (bawang putih)
  • Juice of 1 lime (jeruk nipis)
  • Salt (garam)
  • Flavor enhancer (penyedap rasa)
  • Palm sugar (gula merah)

Instructions:

  1. Prepare the Snapper: Start by cleaning the snapper thoroughly. Once cleaned, sprinkle a bit of salt and drizzle the juice of one lime over the fish. Let it marinate briefly, then proceed to fry until it is golden brown and cooked through.

  2. Make the Spice Paste: While the fish is frying, prepare the spice mix. In a pot, combine the chili, tomato, shallots, and garlic. Add enough water to cover the ingredients, and bring to a boil. Once boiled, strain the mixture and blend until smooth.

  3. Sauté the Spices: In a separate pan, heat some cooking oil. Add the blended spice mixture and sauté until fragrant and fully cooked. Season the paste with salt, flavor enhancer, and palm sugar, adjusting to your taste.

  4. Combine the Ingredients: Once the spices are well-cooked and flavorful, gently add the fried snapper to the pan. Allow the fish to simmer in the spicy sauce for a few minutes, letting the heat seep into the fish and intensify the flavors.

  5. Serve and Enjoy: After a few minutes of simmering, your Bawal Mercon is ready to serve! Enjoy this spicy delicacy with steamed rice and fresh vegetables on the side.
