Description:

A very basic and mild red Enchilada Sauce that can be used in many ways. Can easily be made hotter by adding spices, jalapenos or using hot chili powder. It is quick and easy.

Ingredients:

  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 2 tbsp mild chili powder
  • 4 tbsp flour
  • 4 cups chicken broth
  • 1 cup tomato sauce

Instructions:

  1. Heat the Olive Oil: In a saucepan over medium heat, add olive oil.
  2. Sauté Spices: Mix garlic powder, onion powder, cumin, and mild chili powder into the olive oil. Sauté until fragrant and starting to brown, stirring constantly to avoid burning.
  3. Incorporate Flour: Sprinkle flour over the spice mixture and stir well to combine. Continue cooking for another minute, allowing the flour to cook and blend with the spices.
  4. Add Liquids: Slowly pour in the chicken broth and tomato sauce, stirring constantly to prevent lumps from forming.
  5. Thicken Sauce: Cook and stir the mixture until it thickens to your desired consistency, usually around 5-7 minutes.
  6. Adjust Seasoning: Taste the sauce and adjust the seasoning as needed. You can add more chili powder for heat or adjust salt and pepper to taste.
  7. Serve or Store: Use the red enchilada sauce immediately as desired, or let it cool completely before transferring it to an airtight container for storage.
