Instructions:

  1. Preheat oven: Begin by preheating your oven to 350°F (175°C).

  2. Prepare squash: Carefully cut the spaghetti squash in half lengthwise. Use a spoon to remove and discard the seeds.

  3. Bake squash: Place the squash halves, cut side down, in a greased baking pan. Bake in the preheated oven for 45 minutes to 1 hour, or until the squash is just tender.

  4. Prepare filling: While the squash is baking, prepare the filling. Once the squash is done, use a fork to scrape out the spaghetti-like strands into a large bowl.

  5. Mix ingredients: To the bowl of spaghetti squash, add the Mexican-style tomatoes (including the juice), black beans, 1/2 cup of shredded Monterey Jack cheese, chopped cilantro, ground cumin, and black pepper. Toss everything together until well combined.

  6. Assemble casserole: Spray a 1 1/2 quart casserole dish with nonstick cooking spray. Spoon the spaghetti squash mixture into the prepared casserole dish.

  7. Top with cheese: Sprinkle the remaining 1/4 cup of shredded Monterey Jack cheese over the top of the casserole.

  8. Bake: Bake the casserole, uncovered, in the preheated oven for 30 to 35 minutes, or until heated through and the cheese is melted and bubbly.

  9. Serve: Once done, remove the casserole from the oven and serve immediately.

This Southwest Spaghetti Squash dish is best enjoyed hot, straight from the oven! It’s a wholesome and flavorful meal that’s perfect for any occasion, whether you’re craving something spicy or looking for a nutritious vegetarian option. Enjoy the bold flavors and satisfying textures of this delicious recipe!
