Ingredients:
- 2 cups water
- 3 lbs beef eye round or beef brisket
- 4 cloves garlic
- 1 1/4 tsp salt
- 1 Anaheim chili
- 4 tbsp vinegar
- 2-3 jalapenos (sliced)
- 1 bay leaf
- 1 cup red chili sauce
- 1 tsp black pepper
- 1/2 cup green olives
- 1 tomato (chopped)
- 1/2 cup red wine
Instructions:

Prepare Garlic Puree:
- Smash the garlic cloves and blend with 1/4 cup of water until smooth. Set aside.

Cook the Meat:
- In a large stockpot, combine the meat, 2 cups of water, half of the garlic puree, pickling spices (wrapped in cheesecloth), and salt.
- Bring to a boil, then reduce heat to low and simmer for about 1 hour until the meat is very tender. Skim off any foam that rises to the surface.

Shred the Meat:
- Remove the meat from the pot and allow it to cool slightly. Shred the meat using forks or your fingers. Reserve 1 cup of the meat broth for later use.

Prepare the Chilies:
- Prick the Anaheim chili several times with a fork. Roast under direct heat (broiler works well) until blackened and charred.
- Place the roasted chili in a paper bag or covered bowl for 15 minutes to steam. Peel off the skin, remove the stem and seeds, then chop.

Prepare the Sauce:
- Preheat the oven to 300°F (150°C).
- Heat oil in a large skillet. Cook the onion until tender.
- Add the chopped roasted chili, remaining garlic puree, vinegar, reserved meat broth, sliced jalapenos, bay leaf, shredded meat, red chili sauce, black pepper, green olives, chopped tomato, and red wine.
- Mix well and simmer for about 10 minutes. Remove the bay leaf.

Bake the Barbacoa:
- Transfer the meat mixture to a shallow baking sheet. Cover with foil.
- Bake at 300°F (150°C) for 1 hour, stirring occasionally, until the flavors meld together and the sauce thickens.
