Telur Ceplok Masak Kecap: A Savory Indonesian Delight

Ingredients:

  • 2 large eggs
  • 1/2 onion, thinly sliced
  • 2 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 5 red bird’s eye chilies, sliced
  • 5 green bird’s eye chilies, sliced
  • 1 large green chili, sliced
  • Soy sauce, to taste
  • Sweet soy sauce, to taste
  • Salt, to taste

Instructions:

  1. Prepare the Eggs:

    • Heat a pan over medium heat and add a little oil. Fry the eggs until cooked to your preference—either sunny-side up or crispy around the edges, as per your taste. Once done, remove the eggs and drain on a paper towel to remove excess oil.
  2. Slice the Vegetables:

    • While the eggs are cooking, slice the onion, shallots, garlic, and chilies into thin strips.
  3. Sauté the Aromatics:

    • In the same pan you used for frying the eggs, add the sliced onion, shallots, and garlic. Sauté until they turn a fragrant golden brown, absorbing the residual flavors from the eggs.
  4. Add the Chilies and Sauces:

    • Incorporate the sliced chilies into the pan. Stir-fry briefly until they become aromatic. Next, pour in soy sauce and sweet soy sauce to taste, adjusting the balance to your liking.
  5. Combine and Adjust:

    • Gently return the fried eggs to the pan, allowing them to simmer briefly in the flavorful mixture. Stir carefully to coat the eggs with the sauce. Taste and season with salt if needed.
  6. Serve:

    • Serve the Telur Ceplok Masak Kecap hot, paired with steamed white rice and crispy crackers for a complete meal experience.

This dish offers a delightful blend of savory, spicy, and sweet flavors that is sure to please. Enjoy the rich, aromatic essence of Indonesian cuisine with every bite!
