Instructions

  1. Prepare the Ingredients:
    Start by preparing all the ingredients. Chop the tomatoes and onions, slit the green chilies, and finely chop the garlic.

  2. Cook the Soya Chunks:
    In a saucepan, heat water and bring it to a boil. Add the soya chunks and let them cook until soft. Once cooked, drain the water from the soya chunks and squeeze out any excess moisture. Set them aside.

  3. Temper the Spices:
    Heat oil in a pan over medium heat. Add cumin seeds, curry leaves, and green chilies to the oil. Sauté them for 30 seconds to release their flavors.

  4. Cook the Onion and Garlic:
    Add the chopped onions and garlic to the pan. Sauté them until the onions become soft and translucent.

  5. Cook the Tomatoes:
    Add the chopped tomatoes to the pan and cook until they become soft and mushy.

  6. Add the Spices:
    Once the tomatoes have softened, add the coriander powder, red chili powder, and turmeric powder. Mix well and let it cook for about a minute.

  7. Combine the Soya Chunks:
    Add the prepared soya chunks to the pan. Stir them in well and cook for 2-3 minutes to allow the spices to coat the chunks.

  8. Add Coconut Milk and Simmer:
    Pour in the coconut milk, along with some water (if needed) to achieve your desired consistency. Add salt and curry powder, stirring well. Let the mixture simmer for at least 5 minutes to combine the flavors.

  9. Final Seasoning:
    Taste and adjust the salt if needed. Let the dish cook for another minute before turning off the heat.

  10. Garnish and Serve:
    Garnish the soya chunks masala with freshly chopped coriander leaves for an added burst of flavor.
