Perfect for those who enjoy a bit of heat, this dish is an excellent accompaniment to steamed rice, making it a delightful addition to your culinary repertoire.

Ingredients

Ingredient Quantity
Squid (Cumi) 1 kg
White Tofu (Tahu Putih) 300 g
Shallots (Bawang Merah) 7 pieces
Garlic (Bawang Putih) 5 cloves
Bird’s Eye Chili (Cabai Rawit) 15 pieces (to taste)
Green Chili (Cabai Hijau) 4 pieces
Bay Leaves (Daun Salam) 2 leaves
Kaffir Lime Leaves (Daun Jeruk) 2 leaves
Lime (Jeruk Nipis) 1 piece
Galangal (Laos) to taste
Salt (Garam) to taste
Sugar (Gula) to taste
Water (from boiling squid) as needed

Instructions

  1. Prepare the Squid: Begin by boiling the squid in water until it is halfway cooked. Once ready, remove the squid from the heat and squeeze the juice of one lime over it, adding the bay leaves for extra flavor. Let it cool slightly before cutting the squid into pieces that suit your preference.

  2. Chop the Aromatics: Thinly slice the shallots and garlic. For the chilies, you can adjust the quantity of bird’s eye chilies according to your spice tolerance, and slice the green chilies. Crush the galangal lightly to release its aroma.

  3. Sauté the Spices: In a wok or a large frying pan, heat some oil over medium heat. Add the sliced shallots, garlic, and green chilies. Sauté the mixture until it becomes fragrant. Then, add the kaffir lime leaves and bay leaves, stirring continuously to blend the flavors.

  4. Add the Tofu and Squid: Gently introduce the white tofu and the previously boiled squid into the wok. Season the mixture with salt and sugar, adjusting to taste. Pour in a little of the reserved boiling water from the squid to help create a light sauce.

  5. Cook Thoroughly: Cover the wok with a lid and allow the dish to simmer for a few minutes. This step helps to meld the flavors together and ensures that the squid is fully cooked while absorbing the delicious spices.

  6. Serve: Once everything is cooked through, remove the lid and give the dish a gentle stir. Your Tumis Cumi Pedas Tahu Putih is now ready to be served! Pair it with a warm bowl of steamed rice for a fulfilling meal.
