Spicy Stir-Fried Bean Sprouts with Crispy Tofu

Tauge Tahu Tumis (Stir-Fried Bean Sprouts with Tofu)

Ingredients:

  • 200 grams of bean sprouts (trim off the roots)
  • 3 blocks of tofu
  • 2 shallots, thinly sliced
  • Red bell pepper (or red chili) to taste
  • Green bell pepper (or green chili) to taste
  • 5 tablespoons of spicy sweet soy sauce (the kind with chili seeds)
  • Salt to taste
  • Water as needed
  • Cooking oil

Instructions:

  1. Prepare the Tofu: Cut the tofu into your desired size, then fry it in hot oil until it’s cooked to your preference—either lightly crispy or fully golden and crispy. Once fried, set the tofu aside on paper towels to drain excess oil.

  2. Cook the Aromatics: Heat a generous amount of cooking oil in a skillet or wok over medium heat. Add the sliced shallots and stir-fry until they become soft and translucent.

  3. Add the Bean Sprouts: Introduce the bean sprouts to the skillet. Stir-fry them for a few minutes until they begin to soften but still retain some crunch.

  4. Combine Ingredients: Add the fried tofu pieces to the skillet with the bean sprouts. Stir to mix the ingredients thoroughly.

  5. Season the Dish: Pour in the spicy sweet soy sauce and add salt to taste. Add a splash of water to help blend the flavors and create a bit of sauce.

  6. Final Touches: Stir well, taste, and adjust the seasoning if needed. Finally, add the red and green bell peppers (or chili) and stir briefly to combine.

  7. Serve: Transfer the stir-fried bean sprouts and tofu to a serving dish. Enjoy this flavorful and satisfying dish as part of your meal!
