Toge Cah Telur (Stir-Fried Bean Sprouts with Egg)

Ingredients:

  • 1 cup bean sprouts (toge)
  • 1 egg
  • 2 stalks green onions, finely sliced
  • 5 small bird’s eye chilies, sliced
  • 2 cloves garlic, minced
  • Salt to taste
  • Seasoning powder (such as Totole) to taste

Instructions:

  1. Prepare the Bean Sprouts: Start by trimming the roots off the bean sprouts and washing them thoroughly.

  2. Sauté the Aromatics: Heat a pan over medium heat and add a little oil. Sauté the minced garlic until fragrant, taking care not to let it burn.

  3. Cook the Egg: Crack the egg into the pan and scramble it gently, allowing it to cook through and mix with the garlic.

  4. Add the Bean Sprouts: Once the egg is almost cooked, add the cleaned bean sprouts to the pan. Stir-fry for a few minutes until the bean sprouts begin to soften.

  5. Incorporate Vegetables and Seasoning: Add the sliced green onions and bird’s eye chilies to the pan. Season with salt and seasoning powder (or Totole) to taste. Continue to stir-fry for a brief moment until everything is well combined and the flavors meld together.

  6. Serve: Remove from heat and transfer to a serving dish. Enjoy your Toge Cah Telur hot as a delicious and nutritious side dish.

This simple and flavorful dish is perfect for adding a touch of freshness to any meal, with its crisp bean sprouts and vibrant seasonings.
