Spicy Stir-Fried Beef with Aromatic Chilies

Ingredients:
- 500g frozen beef
- 6 shallots
- 8 garlic cloves
- 2 cm galangal
- 15 red bird’s eye chilies
- 10 green bird’s eye chilies
- Salt, to taste
- Pepper, to taste
- 1 liter beef broth
- 1 cup water

Begin by briefly boiling the frozen beef until it’s partially cooked. Once cooled, cut the beef into bite-sized pieces and set aside.

In a large skillet or wok, heat a bit of oil over medium heat. Add the shallots, garlic, red bird’s eye chilies, green bird’s eye chilies, and galangal. Sauté until fragrant and the shallots and garlic are softened, releasing their aromatic flavors.

Add the pre-cooked beef pieces to the skillet. Stir well to combine the beef with the aromatic spices.

Pour in the beef broth and water, ensuring the beef is covered. Allow the mixture to simmer until the liquid reduces and thickens, and the beef becomes tender. This may take 30-40 minutes. Stir occasionally.

Season with salt, pepper, and additional beef broth if needed. Taste and adjust the seasoning according to your preference.

If the beef is not yet tender, add a bit more water and continue to simmer until the beef reaches the desired tenderness.
