Stir-Fried Beef with Pete and Mustard Greens
Ingredients:
- 300 grams beef
- 1 bunch of mustard greens
- 10 pete beans (sliced)
- For the Spice Mix:
- 3 bird’s eye chilies
- 2 red chilies
- 2 garlic cloves
- 6 shallots
- 1/2 teaspoon shrimp paste
- Salt and sugar to taste
- 1 cup beef broth
- 1.5 tablespoons oyster sauce
- Cooking oil

Prepare the Beef:
- Boil the beef in a pot of water over medium heat for 1.5 hours until tender. Once cooked, remove the beef from the pot and let it cool slightly. Cut the beef into small, bite-sized cubes.

Prepare the Vegetables and Spice Mix:
- While the beef is cooking, thinly slice the garlic, shallots, and both types of chilies.
- Chop the mustard greens and slice the pete beans.

- Heat a skillet or non-stick pan with a bit of cooking oil over medium heat. Add the sliced garlic, shallots, chilies, and shrimp paste. Sauté until fragrant and the spices have softened.

- Add the cubed beef to the pan with the sautéed spices. Stir to ensure the beef is well-coated with the aromatic mixture.
- Add the pete beans and stir-fry briefly to combine.

- Pour in the beef broth and oyster sauce. Stir in salt and sugar to taste. Cook until the mixture is well combined and heated through, but avoid overcooking as the beef is already tender.

- Gently stir in the chopped mustard greens. Cook until the greens are wilted and tender.
