Stir-Fried Egg with Bean Sprouts (Telur Dadar Cah Tauge)

Ingredients:

  • 2 large eggs
  • 1 handful of bean sprouts
  • 3 meatballs (bakso), sliced
  • 2 cloves of garlic, minced
  • 4 shallots, sliced
  • 1 scallion (green onion), chopped
  • 1 red chili pepper, sliced
  • 10 bird’s eye chilies (adjust to taste for spiciness)
  • Sesame oil
  • Raja Rasa sauce
  • Oyster sauce
  • Sweet soy sauce
  • Sugar
  • Salt

Steps:

  1. In a bowl, beat the eggs with a pinch of salt. Heat a skillet with a little oil and pour in the beaten eggs, cooking them into a thin omelet. Once cooked, slice the omelet into strips and set aside.

  2. In the same skillet, add a bit more oil and sauté the minced garlic and sliced shallots until fragrant. Add the red chili pepper and bird’s eye chilies, cooking for a minute until they release their aroma.

  3. Pour in enough water to create a light sauce base. Stir in the oyster sauce, Raja Rasa sauce, sesame oil, sugar, and a pinch of salt. Adjust the seasoning to your taste.

  4. Add the bean sprouts and chopped scallion to the skillet, cooking until the sprouts are tender-crisp and well-coated with the sauce.

  5. Gently fold in the sliced omelet and mix thoroughly to combine all ingredients. Allow the dish to cook for another minute, ensuring everything is heated through and well-mixed.
