Spicy Stir-Fried Fresh Stingray with Kaffir Lime

Instructions:

Prepare the Fish: Begin by frying the fresh stingray until it turns golden brown and crispy, then set aside.

Make the Spice Paste: In a mortar and pestle, coarsely grind the shallots, garlic, and red chilies, adding salt or seasoning powder to taste.

Sauté the Spices: Heat a small amount of oil in a pan and sauté the ground spice mixture until fragrant. 
- 
Add Flavorings: Tear the kaffir lime leaves and add them to the pan, along with a sprinkle of granulated sugar to balance the flavors. 
- 
Combine and Serve: Gently fold in the fried stingray, ensuring it is well-coated with the spice mixture. Cook over low heat for a few minutes, then remove from the heat and serve warm.
