Instructions:

  1. Prepare the Fish: Begin by frying the fresh stingray until it turns golden brown and crispy, then set aside.

  2. Make the Spice Paste: In a mortar and pestle, coarsely grind the shallots, garlic, and red chilies, adding salt or seasoning powder to taste.

  3. Sauté the Spices: Heat a small amount of oil in a pan and sauté the ground spice mixture until fragrant.

  4. Add Flavorings: Tear the kaffir lime leaves and add them to the pan, along with a sprinkle of granulated sugar to balance the flavors.
