Instructions

  1. Prepare the mackerel: Heat oil in a deep pan and fry the mackerel pieces until they are half-cooked and golden brown. Set them aside on a plate, allowing them to drain the excess oil.

  2. Prepare the stir-fry base: In the same pan, add a bit more oil and sauté the sliced red shallots and garlic over medium heat until they release a fragrant aroma and begin to turn golden brown.

  3. Add the spices: Next, add the sliced red chili peppers and bird’s eye chili peppers (if using). Continue to sauté briefly, allowing the spices to blend together.

  4. Add the seasoning: Stir in the tomato sauce, salt, sugar, chicken bouillon powder, and ground black pepper. Add a splash of water and bring the mixture to a gentle boil.

  5. Combine the mackerel: Carefully return the fried mackerel to the pan and gently mix it with the seasoning. Let the dish simmer for a few more minutes, allowing the sauce to thicken slightly and the flavors to soak into the fish.
