Ingredients:

  • 6 mackerel fish (ikan kembung)
  • 2 limes (jeruk nipis), cut into wedges
  • 1 liter cooking oil (for frying)
  • 20 stink beans (pete)
  • 1 teaspoon salt
  • For the seasoning:
    • 15 green chilies (cabe ijo), sliced diagonally
    • 1/2 onion (bawang bombay), sliced
    • 4 shallots (bawang merah), sliced
    • 4 garlic cloves (bawang putih), sliced
    • 5 kaffir lime leaves (daun jeruk)
    • 2 stalks green onions (daun bawang), cut into 1 cm pieces
    • Thinly sliced galangal (lengkuas)
    • Salt to taste
    • Pepper to taste
    • White sugar to taste
    • 1/2 cup water
    • 2 tablespoons oyster sauce (saus tiram)
    • 3 tablespoons fermented soybeans (tauco)

Instructions:

  1. Prepare the Fish:

    • Clean the mackerel fish thoroughly. Make 2 to 3 diagonal cuts on the belly of each fish. Sprinkle with 1 teaspoon of salt and squeeze over the lime juice. Allow it to marinate for 10 minutes.
  2. Fry the Fish:

    • Heat 1 liter of cooking oil in a large pan over medium-high heat. Fry the marinated mackerel in the hot oil until golden brown and crispy. Remove and drain on paper towels.
  3. Cook the Seasoning:

    • In the same pan, remove excess oil, leaving about 5 tablespoons. Add the sliced green chilies, onion, shallots, garlic, and kaffir lime leaves to the pan. Sauté until fragrant.
    • Add the oyster sauce, fermented soybeans, stink beans, and water. Cook until the water is almost evaporated and the mixture has thickened.
    • Stir in the green onions and adjust the seasoning with salt, sugar, and pepper according to your taste.
  4. Combine and Serve:

    • Place the fried mackerel on a serving plate. Pour the cooked seasoning mixture over the fish.
    • Serve hot and enjoy the delicious fusion of spicy, savory, and aromatic flavors.
