Stir-Fried Mustard Greens with Tofu

Ingredients:

  • 1 bunch of mustard greens (sawi hijau), roughly chopped
  • 2-3 blocks of firm tofu, cut into cubes and fried until half-cooked
  • 3 shallots, thinly sliced
  • 2 cloves of garlic, minced
  • 3 medium chili peppers, including a mix of mild and hot, thinly sliced
  • Cooking oil, as needed
  • 1/4 teaspoon granulated sugar
  • 1 teaspoon chicken bouillon (Royco ayam)
  • 1/2 teaspoon oyster sauce
  • 1/2 teaspoon soy sauce (kecap asin)
  • A small amount of water

Instructions:

  1. Heat a generous amount of cooking oil in a large skillet or wok over medium heat.
  2. Add the sliced shallots and minced garlic to the skillet. Sauté until fragrant and translucent.
  3. Stir in the sliced chili peppers and cook for an additional minute.
  4. Add the chopped mustard greens to the skillet, stirring continuously until the greens begin to wilt.
  5. Incorporate the fried tofu cubes into the mixture, ensuring they are well combined with the greens.
  6. Season with oyster sauce, soy sauce, and Royco chicken bouillon. Sprinkle the granulated sugar over the top.
  7. Add a small splash of water to the skillet, which will help create a bit of sauce and prevent sticking. Cover and let simmer for a few minutes.
  8. Remove the cover and stir everything together, allowing the flavors to meld and the sauce to thicken slightly.
  9. Once the greens are tender and everything is well mixed, remove from heat.
  10. Serve hot as a delicious side dish or a light main course.
