Stir-Fried Mustard Greens with Tofu
Ingredients:
- 1 bunch of mustard greens (sawi hijau), roughly chopped
- 2-3 blocks of firm tofu, cut into cubes and fried until half-cooked
- 3 shallots, thinly sliced
- 2 cloves of garlic, minced
- 3 medium chili peppers, including a mix of mild and hot, thinly sliced
- Cooking oil, as needed
- 1/4 teaspoon granulated sugar
- 1 teaspoon chicken bouillon (Royco ayam)
- 1/2 teaspoon oyster sauce
- 1/2 teaspoon soy sauce (kecap asin)
- A small amount of water
Instructions:
- Heat a generous amount of cooking oil in a large skillet or wok over medium heat.
- Add the sliced shallots and minced garlic to the skillet. Sauté until fragrant and translucent.
- Stir in the sliced chili peppers and cook for an additional minute.
- Add the chopped mustard greens to the skillet, stirring continuously until the greens begin to wilt.
- Incorporate the fried tofu cubes into the mixture, ensuring they are well combined with the greens.
- Season with oyster sauce, soy sauce, and Royco chicken bouillon. Sprinkle the granulated sugar over the top.
- Add a small splash of water to the skillet, which will help create a bit of sauce and prevent sticking. Cover and let simmer for a few minutes.
- Remove the cover and stir everything together, allowing the flavors to meld and the sauce to thicken slightly.
- Once the greens are tender and everything is well mixed, remove from heat.
- Serve hot as a delicious side dish or a light main course.
