Stir-Fried Nile Tilapia with Long Beans (Ikan Nila Goreng Tumis)

Ingredients

  • 2 pieces of Nile tilapia
  • 1 bunch of long beans (kacang panjang)
  • 10 red chilies (8 chilies ground, 2 chilies sliced diagonally)
  • 1 kaffir lime leaf, thinly sliced
  • 1 tomato, diced
  • 1 lime (for marinating the fish)
  • Salt to taste
  • Flavor enhancer to taste
  • Water as needed

For the Spice Paste:

  • 8 red chilies
  • 5 shallots
  • 1 clove of garlic
  • 1 cm turmeric
  • 1 cm ginger
  • 1 candlenut (kemiri)

Steps

  1. Prepare the Fish:

    • Rinse the Nile tilapia thoroughly to remove any impurities.
    • Rub the fish with salt and lime juice, then let it marinate for a few minutes.
  2. Cook the Vegetables and Fish:

    • Heat oil in a pan and fry the long beans until they are tender. Remove and set aside.
    • In the same pan, fry the marinated Nile tilapia until golden brown and crispy. Remove and set aside.
  3. Make the Spice Paste:

    • Grind the red chilies, shallots, garlic, turmeric, ginger, and candlenut into a smooth paste.
  4. Prepare the Stir-Fry:

    • In the same pan, add a little oil and sauté the ground spice paste until fragrant.
    • Add the diced tomato, sliced red chilies, and kaffir lime leaf. Stir well.
    • Season with salt, flavor enhancer, and a splash of water. Cook until the mixture starts to thicken slightly.
  5. Combine and Serve:

    • Add the fried tilapia and long beans to the pan. Stir everything together and cook briefly until the sauce slightly thickens and coats the fish and beans.
    • Remove from heat and serve immediately.
