Instructions

  1. Prepare the Ingredients: Start by cutting the firm tofu and tempeh into your desired sizes. Chop the red shallots and garlic, slice the bird’s eye chili and red chili pepper, and smash the galangal.

  2. Sauté Aromatics: In a large frying pan or wok, heat a generous amount of cooking oil over medium heat. Add the finely chopped garlic and sauté until fragrant. Next, add the coarsely chopped shallots, sliced chilies, shrimp paste, smashed galangal, and bay leaves. Stir everything together and cook until the shallots become translucent and the spices are aromatic.

  3. Add Tofu and Tempeh: Gently introduce the tofu and tempeh to the pan. Stir-fry everything together, ensuring that the tofu and tempeh are coated well with the aromatic mixture. Season with salt and pepper to your taste.

  4. Incorporate Sauces: Pour in a small amount of water (about 250 ml) to help the ingredients cook evenly. Then, add the sweet soy sauce and palm sugar. Stir well to combine all the flavors.

  5. Simmer and Reduce: Allow the mixture to cook until the water reduces and thickens slightly, ensuring that the tofu and tempeh absorb the flavors. Be sure to taste and adjust the seasoning if necessary.

  6. Serve and Enjoy: Once the dish is cooked to your liking, remove it from heat. Transfer to a serving dish and enjoy hot. For those who love extra heat, feel free to add more chilies according to your preference.

This dish pairs wonderfully with steamed rice and makes for a satisfying meal that’s both hearty and flavorful, showcasing the beautiful balance of textures and tastes that Indonesian cuisine is known for. Enjoy your homemade Oseng Tahu Tempe!
