Stir-Fried Tofu with Long Beans and Bean Sprouts
Ingredients:
- 1 bunch of long beans (approximately 5 cm pieces)
- 4 blocks of firm tofu (cut into cubes)
- 1 handful of large bean sprouts
- 7 cloves garlic
- 4 cloves shallots
- 9 bird’s eye chilies (adjust to taste)
- 1 tablespoon oyster sauce
- Salt and sugar, to taste

Prepare the Tofu: Heat oil in a frying pan over medium heat. Fry the tofu cubes until they are golden brown on all sides. Remove the tofu from the pan and set aside on a paper towel-lined plate to drain excess oil.

Make the Spice Paste: In a mortar and pestle or food processor, grind the garlic, shallots, and bird’s eye chilies into a coarse paste.

Sauté the Spice Paste: In the same pan used for frying the tofu, add a little more oil if needed. Add the spice paste and sauté over medium heat until fragrant and golden brown.

Cook the Vegetables: Add the long beans and bean sprouts to the pan. Stir-fry for a few minutes until the vegetables are slightly tender but still crisp.

Combine Ingredients: Return the fried tofu to the pan. Stir well to combine with the vegetables and spice paste.

Season the Dish: Add the oyster sauce, salt, and sugar to taste. Stir everything together and adjust the seasoning if necessary.

Serve: Once the vegetables are cooked to your liking and the flavors are well combined, remove the pan from heat. Serve hot as a delicious side dish or main course.
