Cumin Seeds (Jeera) 1/2 teaspoon
SSP Asafoetida (Hing) 1/2 teaspoon
Amchur (Dry Mango Powder) 1 teaspoon
Turmeric Powder (Haldi) 1/2 teaspoon
Coriander Powder (Dhania) 1/2 teaspoon
Salt As required
Fresh Coriander Leaves (Dhania) As required, finely chopped

Instructions:

  1. Prepare the Spiced Gram Flour Filling:
    Begin by preparing the besan filling. Heat 1 tablespoon of oil in a wok or kadai. Once the oil is hot, add 1/2 teaspoon of cumin seeds and 1/2 teaspoon of asafoetida (hing). Sauté the mixture for about 30 seconds until aromatic.

  2. Cook the Besan:
    Add 1/2 cup of gram flour (besan) to the wok. Stir continuously on a low flame to ensure the besan doesn’t burn. Cook for about 10 to 15 minutes, or until the besan turns a light golden color and gives off a nutty aroma.

  3. Add the Spices:
    Once the besan is roasted, add 1 teaspoon of amchur powder, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of coriander powder, and salt to taste. Stir well and cook for another 3 to 4 minutes on low heat, allowing the spices to blend into the besan mixture. Once done, turn off the heat and set the mixture aside.

  4. Stuff the Chilies:
    Take the deseeded and slit green chilies (badi hari mirch) and stuff them generously with the prepared spiced besan mixture. Ensure that each chili is filled well, but not overstuffed.

  5. Cook the Stuffed Chilies:
    Heat a little oil in a wide pan over medium heat. Gently place the stuffed chilies in the pan. Sprinkle a small amount of water over the chilies and cover the pan with a lid. Let the chilies cook for about 10 to 15 minutes, or until they soften and the flavors meld together.

  6. Serve and Enjoy:
    Once the Bharwa Besan Mirch Sabzi is cooked and the chilies have softened, transfer the dish to a serving bowl. Garnish with freshly chopped coriander leaves. Serve this flavorful dish as a side with dal fry and chapatis for a complete, satisfying lunch or dinner.
