Instructions:

  1. Prepare the Rouladen: Begin by pounding the rouladen slices to tenderize them. Be gentle, you don’t want to obliterate them, just give them a few taps to soften them up.

  2. Assemble the Rouladen: Lay out the tenderized rouladen slices on a clean cutting board. Spread approximately 1/2 cup of refried beans onto each slice, followed by 2-3 tablespoons of shredded Monterey Jack cheese.

  3. Roll ‘Em Up: Carefully roll up each rouladen slice, ensuring that the filling stays inside. Secure the rolls with toothpicks to prevent them from unraveling during cooking.

  4. Preheat the Oven: Preheat your oven to 375°F (190°C).

  5. Arrange in a Dish: Place the rolled rouladen side by side in an oven-proof casserole dish. Pour the salsa evenly over the rouladen, ensuring they’re well-covered. Then, cover the dish with foil.

  6. Bake: Transfer the dish to the preheated oven and bake for 30 minutes, allowing the flavors to meld together.

  7. Add Cheese: After 30 minutes, remove the foil and sprinkle the remaining shredded Monterey Jack cheese over the top of the rouladen rolls.

  8. Continue Baking: Return the uncovered dish to the oven and continue baking for an additional 15 minutes, or until the cheese is melted and bubbly, and the rouladen are heated through.

  9. Serve: Once done, remove the Mexican Rouladen from the oven. Serve hot, garnished with slices of avocado and a dollop of sour cream on top for extra indulgence.

Enjoy your Mexican Rouladen with a zesty salsa kick and creamy avocado goodness! 🌯🥑🧀
