Tempe Melet – Tempe Pedes

Tempe Melet, or spicy stuffed tempeh, is a delicious Indonesian dish that combines the rich flavors of tempeh with a spicy sambal filling, all enveloped in a crispy batter. This dish is perfect for those who love a kick in their meals.

Ingredients

Batter Ingredients:
Low-Protein Flour 250 grams
Water As needed
Salt To taste
Ground Coriander 1 tablespoon
Sugar 1 teaspoon
Oil (for frying) As needed
Margarine (optional) 1 tablespoon

Instructions

  1. Prepare the Tempeh: Cut the tempeh into thick slices (about 1.5 to 2 cm) without slicing all the way through, creating a pocket for the filling.

  2. Make the Sambal Filling: In a mortar and pestle, grind together the red shallots, garlic, tomato, and bird’s eye chili until roughly blended (a food processor can be used for convenience, but avoid over-pureeing).

  3. Cook the Filling: Heat oil in a pan, and once hot, add the sambal mixture. Season with salt and sugar, adjusting to your taste. Sauté until fragrant.

  4. Stuff the Tempeh: Carefully spoon the sambal filling into the pockets of the tempeh slices.

  5. Prepare the Batter: In a bowl, mix the low-protein flour with ground coriander. Gradually add water until the batter reaches a thick, pancake-like consistency. Season with salt and stir in the margarine if using.

  6. Fry the Tempeh: In a deep pan, heat enough oil for frying. Dip each stuffed tempeh piece into the batter, ensuring it’s well-coated. Carefully place them into the hot oil and fry until golden brown.

  7. Serve: Remove the fried tempeh from the oil and drain on paper towels. Serve hot and enjoy the delightful flavors of this crispy, spicy treat.

Notes

While the batter can traditionally include finely blended shallots, garlic, and turmeric, this version skips those ingredients for simplicity. Adjust spice levels according to your preference to achieve the ultimate kick! Enjoy Tempe Melet with a side of rice or as a snack on its own.
