Gurame Asam Manis Pedas: A Delicious Indonesian Delight

Ingredients:

  • 1 whole gurame fish fillet
  • 1 lime (for juicing)
  • Flour seasoning (to taste)
  • All-purpose flour (as needed)

For the Sauce:

  • 4 shallots
  • 3 cloves of garlic
  • 1 small onion
  • 5 curly chilies
  • 3 bird’s eye chilies
  • 1 small tomato
  • 1/4 bell pepper
  • 3 tablespoons tomato sauce
  • 4 tablespoons chili sauce
  • Sugar, salt, and ground pepper to taste

Preparation Steps:

  1. Clean and Marinate the Fish: Start by thoroughly cleaning the gurame fish fillet. Cut it into smaller pieces and rub it with the juice of one lime, allowing it to marinate for about 15 minutes. Rinse the fish again with clean water afterward.

  2. Prepare the Flour Mixture: In a separate bowl, combine the flour seasoning with all-purpose flour to ensure a balanced flavor. Let this mixture chill in the refrigerator for at least 1 hour, allowing the flavors to meld.

  3. Fry the Fish: Heat oil in a frying pan over medium heat. Coat the marinated fish pieces in the flour mixture and fry them until golden brown. This should create a deliciously crispy texture.

  4. Chop the Vegetables: While the fish is frying, finely chop the shallots and garlic. Slice the onion, chilies, bell pepper, and tomato into thin pieces.

  5. Make the Sauce: In another pan, heat 3 tablespoons of cooking oil. Sauté the chopped shallots and garlic until fragrant. Then, add the sliced chilies and bell pepper, cooking until softened. Follow with the tomato, tomato sauce, chili sauce, sugar, salt, and ground pepper. Stir until the tomato breaks down and the mixture thickens. If the sauce becomes too thick, feel free to add a splash of water to achieve your desired consistency.

  6. Taste and Adjust: Taste the sauce and adjust the seasoning as needed.

  7. Serve and Enjoy: Once the fish is cooked and the sauce is ready, plate the fried gurame and generously pour the sauce over the top. Enjoy this delightful dish with steamed rice or your favorite side!
