Instructions:

  1. Tempering the Spices
    Heat a small amount of oil in a pan over medium heat. Add the black cumin seeds, whole black pepper, fenugreek seeds, dried red chillies, and white urad dal. Sauté this mixture until the dal turns golden brown and the spices release a fragrant aroma.

  2. Blending the Chutney
    Transfer the sautéed spices to a blender. Add the chopped ginger, jaggery, tamarind pulp, salt, and a tablespoon of water. Blend all ingredients together until smooth and well-combined, creating a thick, flavorful chutney. Transfer the chutney to a bowl.

    In the same pan, heat a little more oil. Once heated, add mustard seeds, a pinch of asafoetida, curry leaves, and a couple of dried red chillies. Allow the mustard seeds to splutter for about 20 seconds.

    Pour this tempering mixture over the blended chutney and mix well, ensuring the chutney is infused with the aromatic tempering.
