Gurame Bakar Pedas Manis (Grilled Gurame in Spicy Sweet Sauce) 😁
Ingredients:

- 1/2 kg Gurame fish
- Lime juice, to taste
- Salt, to taste
For the Spice Paste:
- 8 cloves of shallots
- 4 cloves of garlic
- 6 red chilies
- 4 bird’s eye chilies (also known as Thai chilies)
- 2 cm ginger
- 1 tablespoon coriander seeds
- 1/2 tablespoon black pepper
- 2 tablespoons oyster sauce
- 7 tablespoons sweet soy sauce (kecap manis)
- 1 stalk lemongrass
- Salt, to taste

Clean the Gurame fish thoroughly. Marinate it with lime juice and salt, then let it sit for approximately 30 minutes. This step helps to reduce the fishy smell and add flavor. After marinating, fry the fish in hot oil until crispy. Frying the fish first makes it crispy and adds a delightful texture.

Blend all the ingredients for the spice paste, except the lemongrass stalk, using a blender. Add a little cooking oil to facilitate blending. Once blended, sauté the spice paste for a few minutes until fragrant, then add the lemongrass stalk. Set aside the sautéed spice paste.

Coat the fried Gurame fish with the sautéed spice paste. Let it marinate for another 30 minutes to allow the flavors to infuse into the fish. If you have more time, marinating for a longer period will enhance the flavor even further.

After marinating, grill the fish using butter. Add the remaining spice paste and a bit more sweet soy sauce to the fish while grilling to intensify the flavor. Make sure to turn the fish frequently to prevent it from burning. Grill until the fish is cooked through and the spice paste is well caramelized.
