Spicy Ayam Bacem ala Dee 🌸

Ingredients:

  • 500 grams chicken
  • 6 shallots
  • 4 garlic cloves
  • 1/2 teaspoon toasted coriander seeds
  • 1 teaspoon tamarind, dissolved in water
  • Sweet soy sauce (to taste)
  • Palm sugar (to taste)
  • Salt, granulated sugar, and seasoning (to taste)
  • 10 red bird’s eye chilies
  • 5 curly red chilies
  • Bay leaves, galangal, lemongrass, and ginger
  • Cooking oil for sautéing

Instructions:

  1. Prepare the Chicken:

    • Clean and cut the chicken into pieces, then set aside.
  2. Make the Spice Paste:

    • Blend or pound the shallots, garlic cloves, toasted coriander seeds, and chilies into a smooth paste. Set aside.
  3. Sauté the Spice Paste:

    • Heat cooking oil in a pan over medium heat. Add the spice paste and cook until fragrant.
    • Add bay leaves, lemongrass, and galangal to the pan. Sauté until the mixture becomes aromatic.
  4. Cook the Chicken:

    • Add the chicken pieces to the pan and stir well to coat with the spice mixture.
    • Pour in enough water to submerge the chicken. Add sweet soy sauce to achieve a brown color.
    • Include ginger, tamarind water, salt, palm sugar, granulated sugar, and seasoning. Stir to combine all ingredients.
  5. Simmer the Dish:

    • Cook the mixture on low heat until the liquid reduces and thickens, stirring occasionally to prevent sticking.
    • Taste and adjust the seasoning as needed, adding more sweet soy sauce if desired.
  6. Serve:
