Ayam Suwir Manis Pedas

Ingredients:

  • 5 pieces of chicken breast and 2 pieces of village chicken thighs (your choice)
  • 2 segments of ginger
  • 2 segments of turmeric
  • 1/2 tsp ground pepper
  • 1/2 tsp ground coriander
  • Sugar and salt (to taste)
  • Seasoning (optional)
  • 3 scallions
  • 10 red bird’s eye chilies
  • 1 tomato
  • 2 cloves of garlic
  • 4 shallots
  • 3 tbsp sweet soy sauce
  • 3 candlenuts (ground)

Instructions:

  1. Prepare the Chicken: Start by washing the chicken thoroughly and then draining it. Bring a pot of water to a boil and add the chicken pieces.

  2. Flavor the Broth: Crush the garlic, turmeric, and ginger. Add these to the boiling chicken and let it simmer until the water is reduced slightly. Remove the chicken and shred it into thin pieces.

  3. Prepare the Aromatics: Slice the remaining ginger and turmeric, then chop the garlic, scallions, and tomato. Set these aside.

  4. Create the Spice Paste: Using a mortar and pestle or a blender, grind together the salt, pepper, coriander, sugar, garlic, shallots, candlenuts, and bird’s eye chilies until you achieve a smooth paste.

  5. Sauté the Spices: Heat some oil in a pan and add the spice paste. Sauté until fragrant, then add the sliced ginger, turmeric, garlic, scallions, and tomato. Continue to cook until the mixture is aromatic.

  6. Combine and Cook: Add the shredded chicken to the pan, followed by one glass of the chicken broth and the sweet soy sauce. Stir well and add seasoning to taste. Let the mixture cook until the liquid has absorbed.

  7. Serve: Once the liquid has reduced and the flavors have melded together, your Ayam Suwir Manis Pedas is ready to serve. Enjoy this spicy and sweet shredded chicken dish with steamed rice for a delightful meal.
