Spicy Sweet Soy Beef (Daging Sapi Masak Kecap Pedas)
Ingredients:
- 1/2 kg beef shank
- 5 shallots
- 4 cloves garlic
- 3 stalks lemongrass
- 4 cm ginger
- 5 red chili peppers (bird’s eye chili)
- 2 green tomatoes
- Sweet soy sauce (kecap manis)
- Salt
- Granulated sugar
- Seasoning (penyedap)
- Black pepper
- 2 tablespoons butter
- 2 tablespoons oyster sauce
- 3 tablespoons soy sauce (kecap asin)
Instructions:

Prepare the Beef:
- Begin by boiling the beef shank in water until tender. Once cooked, set it aside.

Prepare the Aromatics:
- Slice the shallots and garlic thinly.
- Smash the lemongrass stalks to release their flavor.
- Chop the red chili peppers into small pieces.
- Dice the green tomatoes.

Cook the Aromatics:
- Heat some oil in a pan over medium heat. Add the sliced shallots, garlic, and smashed lemongrass. Sauté until fragrant and softened.

Combine Ingredients:
- Add the diced tomatoes and chopped chili peppers to the pan. Cook until the tomatoes start to break down.

Add the Beef:
- Add the previously boiled beef shank to the pan, stirring to combine with the aromatic mixture.

Season the Dish:
- Season with salt, black pepper, granulated sugar, and seasoning mix (penyedap).
- Add sweet soy sauce (kecap manis), soy sauce (kecap asin), and oyster sauce. Stir well to coat the beef evenly.

Simmer and Finish:
- Pour in some beef broth or water as needed to create a sauce. Allow the dish to simmer until the flavors meld and the sauce has reduced to your desired consistency.

Serve:
- Once the sauce is well-reduced and the beef is thoroughly coated with the rich, spicy sauce, remove from heat. Transfer to a serving dish and garnish if desired.

- Serve hot with steamed rice or your preferred side.
