Spicy Sweet Soy Chicken (Ayam Kecap Pedas)

Ingredients:

  • 1/4 kg chicken (cut into pieces)
  • For the Spice Paste:
    • 4 red curly chilies
    • 4 bird’s eye chilies (optional, adjust to desired spiciness)
    • 4 shallots
    • 3 cloves garlic
    • 1 onion
    • 3 kaffir lime leaves
    • 1 tablespoon granulated sugar
    • 1/2 teaspoon salt
    • Sweet soy sauce (to taste)
    • Oyster sauce (to taste)

Instructions:

  1. Preparation: Begin by thoroughly washing all the ingredients. Cut the chicken into bite-sized pieces. Slice the red curly chilies and bird’s eye chilies (if using). Peel and finely chop the shallots and garlic. Slice the onion thinly.

  2. Cooking the Chicken: In a large pan or pot, combine the chicken pieces with the kaffir lime leaves, red chilies, bird’s eye chilies, shallots, garlic, and a splash of water. Bring to a boil over medium heat.

  3. Simmer: Allow the mixture to simmer until the water is reduced and the chicken is tender. Stir occasionally to ensure even cooking.

  4. Seasoning: Once the water has mostly evaporated, add salt, sugar, sweet soy sauce, and oyster sauce to taste. Stir well to incorporate the flavors.

  5. Adding Onions: Add the sliced onion to the pan. Continue cooking until the onions are soft and the sauce has thickened, allowing it to absorb into the chicken.

  6. Final Touches: Taste and adjust the seasoning as needed. Once the sauce is thick and sticky, and the chicken is well-coated, remove from heat.
