Ayam Kecap Lada Hitam: A Savory Indonesian Delight

Ingredients:

  • For the Chicken:

    • 1 kg chicken, cut into pieces
  • Chicken Marinade:

    • 5 cloves garlic
    • 2 tablespoons coriander seeds
    • 2 cm turmeric root
    • Salt, to taste
  • For the Black Pepper Sauce:

    • 8 shallots
    • 5 cloves garlic
    • 1 onion
    • 1 bell pepper
    • 3 stalks green onions
    • 7 bird’s eye chilies (optional, adjust to taste)
    • 1 tomato
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon black pepper powder
    • 1 teaspoon sesame oil
    • 1 tablespoon oyster sauce
    • 1 tablespoon savory seasoning (Raja Rasa)
    • 1 tablespoon chili sauce
    • 5 tablespoons sweet soy sauce (kecap manis)
    • 1 tablespoon cornstarch
    • Salt and sugar, to taste

Instructions:

  1. Prepare the Chicken:

    • Begin by boiling the chicken pieces along with the chicken marinade ingredients: garlic, coriander seeds, turmeric root, and salt. Simmer until the chicken is thoroughly cooked.
    • Once the chicken is cooked, allow it to marinate for approximately 2 hours. This resting period helps the flavors penetrate the meat. After marinating, fry the chicken in hot oil until golden brown and crispy.
  2. Prepare the Black Pepper Sauce:

    • In a pan, heat a small amount of oil and sauté the shallots, garlic, bird’s eye chilies, onion, and bell pepper until they are softened and aromatic.
    • Add the fried chicken pieces to the pan with the sautéed vegetables. Pour in approximately 300 ml of water to help create the sauce base. Bring the mixture to a boil.
  3. Cook the Sauce:

    • Once boiling, add the green onions, ground black pepper, black pepper powder, oyster sauce, chili sauce, sweet soy sauce, sesame oil, salt, and sugar. Continue to simmer over medium heat until the sauce reduces slightly and thickens.
  4. Finish and Serve:

    • Add the chopped tomato and cornstarch mixed with a small amount of water to the pan. Stir well to combine and allow the sauce to thicken further.
    • Adjust seasoning with salt and sugar to taste. Cook until the sauce reaches your desired consistency.
  5. Serve:
