Instructions:
Step | Description |

1 | Fry the tofu and chicken fillet until golden brown. Remove and drain on paper towels. |
2 | Prepare the egg mixture by whisking 2 eggs, sliced leeks, bird’s eye chili, garlic, celery, and black pepper in a bowl. Fry the egg mixture in a hot pan until browned, then remove and set aside. |
3 | In the same pan, sauté the onions, garlic, and shallots until fragrant. Add the diced tomato, celery, and chicken fillet, and stir-fry for a minute. |

5 | Once boiling, add the dissolved cornstarch and flour to thicken the sauce. Stir continuously and adjust seasoning to taste. |
6 | Finally, add the fried tofu and cooked egg into the mixture. Simmer for a few minutes until everything is well combined and heated through. |
