With a knife held at a slanting position, almost parallel to the cutting surface, slice each chicken breast half crosswise into 1/2-inch thick slices.

In a medium bowl, combine soy sauce, sherry, cornstarch, minced ginger, sugar, and crushed red pepper flakes. Add the sliced chicken to the bowl and toss to coat the chicken evenly with the marinade.
