Asem Pedes Iga Sapi: Spicy Tamarind Beef Ribs

Ingredients

  • 500 grams of Beef Ribs (Iga Sapi)
  • 2 liters of Water
  • 7 cloves of Garlic
  • 10 shallots
  • 3 finger-sized pieces of Turmeric
  • 2 finger-sized pieces of Galangal
  • 2 finger-sized pieces of Ginger
  • 5 leaves of Kaffir Lime
  • 2 stalks of Lemongrass
  • 3 large Red Chilies
  • 10-15 small Bird’s Eye Chilies
  • 1 teaspoon of Ground Pepper
  • 3 Tomatoes or 3 pieces of Tamarind (Blimbing Wuluh)
  • Sugar (to taste)
  • Salt (to taste)
  • Seasoning Powder (to taste)
  • Cooking Oil

Instructions

  1. Prepare the Beef Ribs:

    • Bring 2 liters of water to a boil in a large pot. Add the beef ribs and cook until they start to foam. Skim off any brown scum that rises to the surface to prevent any unpleasant smell. Continue cooking until the ribs are tender. Once done, turn off the heat and set aside.
  2. Prepare the Spice Paste:

    • Thinly slice the garlic, shallots, turmeric, galangal, and ginger. Set aside.
    • Slice the red chilies and bird’s eye chilies. Adjust the quantity of bird’s eye chilies according to your spice preference.
  3. Sauté the Aromatics:

    • Heat oil in a skillet over medium heat. Add the lemongrass and kaffir lime leaves, and sauté until fragrant.
    • Add the sliced shallots, garlic, turmeric, galangal, and ginger to the skillet. Cook until the mixture is aromatic and the shallots are softened.
  4. Add the Chilies:

    • Add the red chilies and bird’s eye chilies to the skillet. Cook until the chilies are softened and the mixture is well blended.
  5. Combine with Beef Ribs:

    • Transfer the sautéed spice paste into the pot with the beef ribs. Stir well to combine.
    • Season with ground pepper, salt, sugar, and seasoning powder to taste.
  6. Add the Tomatoes:

    • Cut the tomatoes into quarters and add them to the pot. If using tamarind, you can add it instead of tomatoes. Cook for a few more minutes until the tomatoes are softened and the flavors are well incorporated.
  7. Simmer:

    • Allow the mixture to simmer until the beef ribs are tender and the flavors have melded together. Adjust seasoning if needed.
  8. Serve:

    • Once the beef is tender and the broth is flavorful, turn off the heat. Serve the Asem Pedes Iga Sapi hot with steamed rice.
