Asam Pedas Dori Fish with Basil

Ingredients

  • Dory Fish: 1/4 fillet
  • Basil Leaves: 2 bunches
  • Bird’s Eye Chili: 10 pieces (adjust to taste)
  • Galangal: 1 thumb-sized piece
  • Water: 400 cc

For the Spice Paste:

  • Shallots: 10 pieces
  • Garlic: 4 cloves
  • Candlenuts: 5 pieces
  • Turmeric: 1 thumb-sized piece
  • Salt: to taste
  • Seasoning: to taste
  • Sugar: to taste
  • Tamarind Water: a little

Instructions

  1. Prepare the Fish:

    • Clean the dory fish thoroughly using lemon or lime juice. Set aside.
  2. Prepare the Vegetables:

    • Wash the basil leaves, bird’s eye chilies, and galangal. Lightly crush the galangal.
  3. Make the Spice Paste:

    • Blend or grind together the shallots, garlic, candlenuts, turmeric, salt, seasoning, sugar, and a little tamarind water until smooth.
  4. Cook the Dish:

    • Sauté the spice paste in a pan until fragrant.
    • Add the crushed galangal and pour in the water, stirring to combine.
    • Finally, add the dory fish fillet and let it cook for about 10 minutes until the fish is done.
    • Add the basil leaves and bird’s eye chilies, simmer for a few more minutes until the basil is wilted.
  5. Serve:

    • Serve hot with steamed rice.
