Spicy Tamarind Dory with Fresh Basil

Asam Pedas Dori Fish with Basil
Ingredients
- Dory Fish: 1/4 fillet
- Basil Leaves: 2 bunches
- Bird’s Eye Chili: 10 pieces (adjust to taste)
- Galangal: 1 thumb-sized piece
- Water: 400 cc
For the Spice Paste:
- Shallots: 10 pieces
- Garlic: 4 cloves
- Candlenuts: 5 pieces
- Turmeric: 1 thumb-sized piece
- Salt: to taste
- Seasoning: to taste
- Sugar: to taste
- Tamarind Water: a little
Instructions
- 
Prepare the Fish: Related Articles- Clean the dory fish thoroughly using lemon or lime juice. Set aside.
 
- 
Prepare the Vegetables: - Wash the basil leaves, bird’s eye chilies, and galangal. Lightly crush the galangal.
 
- 
Make the Spice Paste: - Blend or grind together the shallots, garlic, candlenuts, turmeric, salt, seasoning, sugar, and a little tamarind water until smooth.
 
- 
Cook the Dish: - Sauté the spice paste in a pan until fragrant.
- Add the crushed galangal and pour in the water, stirring to combine.
- Finally, add the dory fish fillet and let it cook for about 10 minutes until the fish is done.
- Add the basil leaves and bird’s eye chilies, simmer for a few more minutes until the basil is wilted.
 
- 
Serve: - Serve hot with steamed rice.
