Bandeng Kuah Asam | Spicy Sour Milkfish Soup

Ingredients

  • 2 whole milkfish (ikan bandeng), cleaned and cut into three pieces
  • 4 shallots, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 2 pieces of ginger, thinly sliced
  • 1 teaspoon tamarind, dissolved in water
  • 1 tomato, cut into six wedges
  • 2 green onions (daun bawang), sliced into 3 cm pieces
  • 1/4 teaspoon ground turmeric (or 2 pieces of fresh turmeric, thinly sliced)
  • 1-2 kaffir lime leaves (daun jeruk)
  • 1 bay leaf (daun salam)
  • 2 tablespoons lime juice (optional)
  • 10 bird’s eye chilies (cabe rawit), sliced
  • Salt to taste
  • Beef seasoning (royco sapi), optional
  • 3-4 cups water

Instructions

  1. Prepare the Fish: Clean the milkfish thoroughly and cut it into three pieces. Rub the pieces with lime juice to enhance the flavor and reduce any fishy smell, then set aside.

  2. Sauté the Aromatics: In a pot, heat a splash of oil over medium heat. Add the sliced shallots, garlic, and ginger, and sauté until fragrant, allowing the aromas to fill your kitchen.

  3. Add Water: Pour in the water and bring it to a boil. This will serve as the base for your soup.

  4. Cook the Fish: Once the water reaches a rolling boil, gently add the pieces of fish into the pot. Stir gently to combine the fish with the broth.

  5. Season the Soup: Add salt to taste, along with the optional beef seasoning. Incorporate the tamarind water and lime juice, stirring well. Allow the soup to simmer until the fish is fully cooked, making sure to taste and adjust seasoning as necessary.

  6. Final Touches: The final flavor profile of this soup should be a delightful combination of sour, fresh, and spicy. Don’t forget to add the sliced tomato, green onions, turmeric, kaffir lime leaves, bay leaf, and bird’s eye chilies during the last few minutes of cooking to ensure they retain their vibrant flavors.

  7. Serve and Enjoy: Once everything is cooked through and the flavors have melded beautifully, your Bandeng Kuah Asam is ready to serve. This dish pairs wonderfully with steamed rice or can be enjoyed on its own for a light meal.

Enjoy the vibrant, tangy taste of this Spicy Sour Milkfish Soup! Perfect for those who appreciate a refreshing yet spicy culinary experience. Happy cooking! 😊
