Asam Padeh (Asam Pedas) Patin with Tofu

Tahu sutra Cut to taste
Lengkuas 2 cm, smashed
Sereh 1 stalk, smashed
Ground chili paste 3 tablespoons or to taste
Daun salam 1 leaf
Daun jeruk 2 leaves
Jeruk nipis 1, for marinating
Garam To taste
Asam kandis 1 piece
Water 2 cups

Spices to Blend

Bawang merah (red onion) 5 cloves
Bawang putih (garlic) 3 cloves
Jahe (ginger) 2 cm
Kemiri (candlenuts) 3 pieces
Rawit (bird’s eye chili) To taste for extra spiciness

Instructions

  1. Prepare the Fish: Clean the patin fish thoroughly, then marinate it with lime juice and salt for about 15 minutes. Rinse off and set aside.

  2. Cook the Spices: In a pot, combine the blended spices with water. Add the smashed lemongrass, galangal, bay leaf, and kaffir lime leaves. Bring this mixture to a boil.

  3. Add the Fish and Tofu: Once boiling, gently add the marinated patin and tofu to the pot.

  4. Season: Incorporate the asam kandis and salt into the pot. Allow the soup to thicken slightly, tasting for spice and seasoning; add more chili if desired.
