Ingredients

Ingredient Quantity
Baby Potatoes 1 cup (washed and peeled)
Oil 1 tablespoon
Tikka Masala 1 teaspoon
Fresh Cream (or Milk) 1 tablespoon
Kasuri Methi (Dried Fenugreek Leaves) 1/4 teaspoon
Salt To taste
Kashmiri Dry Red Chillies 2-3 (for paste)
Garlic 1 tablespoon (chopped)
Ginger 1/2 tablespoon (chopped)
Coriander Powder (Dhania) 1 teaspoon
Cumin Powder (Jeera) 1 teaspoon
Water 1/4 cup

Preparation Time: 10 minutes

Cooking Time: 30 minutes

Total Time: 40 minutes

Servings: 2-4

Instructions

  1. Prepare the Smooth Paste:
Begin by grinding the ingredients listed under “For Smooth Paste.” In a grinder, combine the Kashmiri dry red chillies, chopped garlic, chopped ginger, coriander powder, cumin powder, and water. Grind everything into a smooth paste. Set this paste aside for later use.

  2. Cook the Baby Potatoes:
Peel and wash the baby potatoes. Use a fork to prick the potatoes evenly on all sides. Place the pricked potatoes into a microwave-safe bowl or dish and microwave them on high for 2-3 minutes, or until they are partially cooked but still firm. Once done, set them aside to cool slightly.

  3. Prepare the Tandoori Marinate:
In a separate microwave-safe bowl, heat the oil on high for about 30 seconds. Add the prepared smooth paste to the bowl and mix well. Microwave the paste on high for another minute to allow the spices to bloom and release their aroma.

  4. Marinate the Potatoes:
Add the partially cooked potatoes into the bowl with the smooth spice paste. Now, add the fresh cream (or milk), Kasuri Methi (dried fenugreek leaves), Tikka Masala, and salt to the potatoes. Mix everything well to ensure that the potatoes are evenly coated in the flavorful paste.

  5. Cook the Potatoes:
Microwave the mixture on high for an additional 2 minutes. Check to see if the potatoes are fully cooked; if not, microwave for another minute or until the potatoes are tender and fully cooked through.

  6. Finishing Touches:
Once the potatoes are cooked, remove them from the microwave and squeeze some fresh lemon juice over the top for added flavor. The tangy lemon will complement the spices beautifully.

  7. Serve:
Transfer the Tandoori Potatoes to a serving platter and garnish with fresh coriander leaves, if desired. Serve these flavorful potatoes with a refreshing Dhaniya Pudina Chutney (Coriander Mint Chutney) on the side. They make for an excellent appetizer or snack for your parties and gatherings!

Tips for the Perfect Tandoori Potatoes:

  • Microwave Cooking: If you don’t have a microwave, you can alternatively steam or boil the potatoes until they are tender but not mushy. Then, follow the same marination process on the stovetop.
  • Customizing Spice Levels: Adjust the amount of Kashmiri dry red chillies based on your heat preference. For a milder version, reduce the chillies or substitute with a pinch of paprika.
  • Make Ahead: You can prepare the marinated potatoes ahead of time and refrigerate them for a few hours or overnight. This allows the spices to marinate even more, making the potatoes even more flavorful.
