Set the heat to gentle, allowing the chicken to simmer for about 10 minutes. Once cooked, carefully remove the chicken from the water and let it cool. Do not discard the water, as it will be used as stock later.

  2. Cook the Onions: In another pan, heat the vegetable oil over medium heat. Add the finely diced onion and sauté gently until it becomes golden brown, releasing its natural sweetness.

  3. Add the Heat: Incorporate the finely chopped green chillies and season with additional salt to taste. Pour in the tamarind water (or lemon juice) along with a splash of the reserved chicken stock. Allow the mixture to simmer gently, letting the sauce reduce slightly.

  4. Thicken the Sauce: After about 5 minutes, add the red chilli powder and mango powder to the sauce. If needed, add more of the stock to achieve your desired consistency and continue cooking until the sauce thickens.

  5. Shred the Chicken: While the sauce is thickening, take the cooled chicken and shred it using two forks.

  6. Combine and Cook: Gently fold the shredded chicken into the thickened sauce, stirring to ensure every piece is well-coated. Let it cook together for a few more minutes, allowing the flavors to meld beautifully.

  7. Finish with Spices: Remove the pan from the heat and sprinkle in the garam masala for an aromatic kick. Add a handful of chopped fresh coriander, giving the dish a refreshing touch.
