Ingredients

For the Fish:

  • 1 whole Nile fish (ikan nila)
  • 1/2 packet of Sajiku fish frying spice mix (bumbu ikan goreng)
  • 1 teaspoon salt
  • 1 glass of water
  • Cooking oil (as needed for frying)

For the Sauce:

  • 4 cloves garlic (bawang putih), minced
  • 7 shallots (bawang merah), minced
  • 1/4 teaspoon ground pepper (merica bubuk)
  • 3 tablespoons tomato sauce (saus tomat)
  • 2 tablespoons chili sauce (saus cabe)
  • Oyster sauce and soy sauce (to taste)
  • 1 small tomato, diced
  • Pineapple, diced (to taste)

Instructions

  1. Prepare the Fish:
Begin by thoroughly cleaning the whole Nile fish under running water, ensuring it’s free from any impurities.

  2. Marinate the Fish:
In a bowl, combine the Sajiku fish frying spice mix with water and salt, mixing until well combined. Submerge the cleaned fish into this marinade, ensuring it’s fully coated, and let it sit for a while to absorb the flavors.

  3. Fry the Fish:
Heat a generous amount of cooking oil in a frying pan over medium-high heat. Carefully add the marinated fish to the hot oil and fry until it is cooked through and has a lovely golden-brown color. This should take about 5-7 minutes on each side, depending on the thickness of the fish. Once cooked, remove the fish and set it aside on a plate lined with paper towels to absorb excess oil.

  4. Prepare the Sauce:
In another pan, heat a small amount of oil and sauté the minced shallots and garlic until they become fragrant and golden. Next, add the ground pepper, water, tomato sauce, chili sauce, oyster sauce, and soy sauce to the pan. Stir well to combine all the ingredients, allowing the sauce to simmer for a few minutes.

  5. Add Fresh Ingredients:
Once the sauce starts to thicken, incorporate the diced tomato and pineapple, stirring gently to combine. Allow the mixture to cook until it reaches a nice consistency, ensuring all flavors meld together beautifully.

  6. Final Touches:
After the sauce has thickened to your liking, taste and adjust the seasoning if necessary. Once satisfied, pour the rich, tangy sauce generously over the fried fish.

  7. Serve:
Your Nila Siram Saus Asam Pedas is now ready to be enjoyed! Serve it warm alongside steamed rice for a complete meal that bursts with flavor.
