- Pressure cook the chickpeas until soft, about 4-5 whistles.

- Heat oil in a large, heavy-bottomed saucepan over medium heat.
- Add cumin seeds and mustard seeds. Allow them to crackle and splutter.
- Add ginger, garlic, chopped onions, and asafoetida. Fry until onions are lightly browned.

- Stir in all dry masalas (coriander powder, red chili powder, garam masala powder, turmeric powder), except cinnamon and clove (powdered).
- Mix well, then add chopped tomatoes. Cook until oil separates.

- Pour in the tamarind extract and mix. Cook until the mixture is fairly dry.
