Instructions:

  1. Prepare Chickpeas:

    • Pressure cook the chickpeas until soft, about 4-5 whistles.
  2. Sauté Aromatics:

    • Heat oil in a large, heavy-bottomed saucepan over medium heat.
    • Add cumin seeds and mustard seeds. Allow them to crackle and splutter.
    • Add ginger, garlic, chopped onions, and asafoetida. Fry until onions are lightly browned.
  3. Add Spices and Tomatoes:

    • Stir in all dry masalas (coriander powder, red chili powder, garam masala powder, turmeric powder), except cinnamon and clove (powdered).
    • Mix well, then add chopped tomatoes. Cook until oil separates.
  4. Combine Chickpeas:

    • Drain the cooked chickpeas and add them to the skillet. Stir well to coat with the spices.
    • Pour in the tamarind extract and mix. Cook until the mixture is fairly dry.
  5. Temper with Ghee and Spices:

    • In a small saucepan, heat ghee. Add the powdered cinnamon and cloves, along with green chilies. Allow them to sizzle briefly.
    • Transfer this tempering to the skillet containing the chickpeas. Gently mix until well combined.
  6. Garnish and Serve:
