Spicy Tauco Stingray (Ikan Pari Masak Tauco Pedas)

Instructions

  1. Prepare the Stingray:
    Start by briefly soaking the smoked stingray in hot water to soften it. Drain and set aside.

  2. Chop the Ingredients:
    Slice the bird’s eye chilies, garlic, shallots, spring onions, and green tomato. Set everything aside for easy access during cooking.

  3. Sauté the Aromatics:
    Heat some oil in a pan. Add the sliced garlic, shallots, spring onions, chilies, and the crushed galangal. Sauté everything until fragrant and slightly softened.

  4. Add the Sauces and Seasonings:
    Pour in some water, then add the tauco, sugar, salt, and Saori sauce. You can also add sweet soy sauce if desired. Stir well, then allow the mixture to come to a boil. Taste the sauce and adjust the seasonings as needed.

  5. Cook the Stingray:
    Once the seasoning is perfect, add the soaked stingray to the pan. Let it simmer until the sauce thickens and the flavors are fully absorbed by the fish. Continue to cook until the liquid has reduced and the stingray is coated in the flavorful sauce.

  6. Serve and Enjoy:
