Garlic (Bawang putih) 3 cloves, peeled and chopped
Sugar 1 tsp
Lime (Jeruk lemo) Juice of 1 lime

Instructions:

  1. Frying the Tempe and Pete:

    • Begin by heating oil in a frying pan over medium heat. Add the tempe and fry until golden brown and crispy. Set aside on paper towels to drain excess oil.
    • Next, fry the pete (stinky beans) until they turn a darker color and become fragrant. Remove and set aside.
  2. Making the Sambal:

    • In the same pan, heat a little oil and fry the small chilies, tomato, shallots, and garlic until they become soft and fragrant.
    • Once cooked, transfer everything to a mortar and pestle or a food processor. Grind the mixture into a coarse paste.
    • Add salt, sugar, and terasi to the paste, then squeeze in the juice of the lime for a fresh, tangy kick. Mix well until the sambal is well-combined.
  3. Assembling the Tempe Pete Geprek:

    • Place the fried tempe and pete on a clean surface or plate. Use the back of a spoon or pestle to gently “geprek” (crush) the tempe and pete until they are slightly flattened.
    • Spread the spicy sambal over the smashed tempe and pete, allowing the flavors to soak in.
  4. Serving:

    • Serve the tempe pete geprek while it’s still warm for the best taste. This dish pairs perfectly with steamed rice or as a tasty snack on its own.
