Tempe (can use daun or plastic-wrapped) 1 block (about 250g)
Sweet soy sauce (kecap manis) To taste (about 2-3 tbsp)
Green chilies (large) 100g (about 1 oz)
Shallots 4 cloves
Garlic 3 cloves
Galangal slice A small piece
Salt To taste
Seasoning (optional) To taste
Cooking oil For frying
Palm sugar (gula jawa) 1-2 tbsp

Instructions:

1. Slice the tempe into small, bite-sized pieces. Heat oil in a pan and fry the tempe until golden brown and crispy. Set aside.
2. Slice the green chilies, shallots, garlic, and galangal into thin pieces.
3. In the same pan, heat some oil and sauté the sliced ingredients until fragrant and softened. Add the palm sugar, salt, and a splash of water to the pan. Stir well.
4. Add the fried tempe to the pan, along with sweet soy sauce and seasoning (if using). Stir everything together and cook for another 2-3 minutes, allowing the flavors to meld. Taste and adjust seasoning if necessary.
5. Once the tempe is well-coated and the flavors are balanced, remove from heat and serve hot. Enjoy your flavorful, spicy stir-fry!
