Spicy Tempe with Sambal (Tempe Melet Seuhah)

Title: Tempe Melet Seuhah (Spicy Tempe with Sambal)

Ingredients:

Main Ingredients
1 block tempe (sliced thick) Cut in half but not all the way through
Sambal Ingredients
3 cloves garlic
6 shallots
10 red curly chilies
1 handful green bird’s eye chilies (adjust to taste)
1 tomato
1/2 tsp terasi (fermented shrimp paste) Use ABC brand or similar
Salt and sugar to taste
Batter Ingredients
5 tbsp flour
Pinch of salt and chicken stock powder
Water (enough to make a batter) Do not make it too thin
Oil for frying

Instructions:

  1. Prepare the sambal:
    Heat 2 tbsp of oil in a pan. Add the garlic, shallots, red curly chilies, green bird’s eye chilies, and tomato. Cook until the ingredients soften and become fragrant. Once done, remove from heat.

  2. Mash the sambal:
    Use a mortar and pestle (cobek) to roughly grind the cooked ingredients. Add salt and sugar to taste. Test the seasoning and adjust as needed.

  3. Prepare the tempe:
    Take the block of tempe and slice it thickly, making sure to leave the bottom intact so it stays in one piece. Open up the slices and fill each one with the sambal mixture.

  4. Coat the tempe:
    Mix the flour, salt, and chicken stock powder in a bowl. Add enough water to form a batter (be careful not to make it too runny). Dip the stuffed tempe into the batter, ensuring it’s evenly coated.

  5. Fry the tempe:
    Heat oil in a pan over medium-high heat. Fry the battered tempe until golden brown and crispy. Remove from the oil and drain on paper towels.

  6. Serve and enjoy:
    Serve the crispy, spicy tempe immediately. The combination of the crispy batter and the fiery sambal filling will surely make your taste buds tingle—spicy, crunchy, and utterly delicious!


Notes:

  • Spice Level: Adjust the number of bird’s eye chilies according to your preferred spice level. For a milder version, you can reduce or omit the rawit (bird’s eye chilies).
