Tempe Tumis Kulit Ayam: A Delicious Indonesian Stir-Fry

Ingredients

  • 200 grams chicken skin (cut into pieces)

  • 1 teaspoon soy sauce
  • 3 tablespoons sweet soy sauce (adjust to taste)
  • 1 stalk lemongrass (lightly bruised)
  • 1 cm galangal (crushed)
  • 3 kaffir lime leaves
  • 2 bay leaves
  • Salt (to taste)
  • Ground black pepper (to taste)
  • Vegetable oil (for frying and sautéing)

Instructions

  1. Prepare the Tempeh:

    • Heat oil in a frying pan over medium heat. Fry the tempeh cubes until they are half crispy. Remove and set aside.
  2. Prepare the Chicken Skin:

    • Clean the chicken skin thoroughly. Soak it in lime juice for about 10 minutes, then rinse it well.
  3. Sauté the Aromatics:

    • In the same pan, use a small amount of oil to sauté the finely chopped shallots and garlic until fragrant. Since the chicken skin will release its own fat, you need only a little oil.
  4. Add the Spices and Chicken Skin:

    • Add the sliced bird’s eye chilies, bruised lemongrass, crushed galangal, kaffir lime leaves, and bay leaves to the pan. Stir well to combine.
  5. Cook the Chicken Skin:

    • Add the chicken skin to the pan and cook until it is fully cooked and tender, stirring occasionally.
  6. Combine with Tempeh:

    • Add the previously fried tempeh to the pan. Pour in the Worcestershire sauce, soy sauce, and sweet soy sauce. Season with salt and ground black pepper to taste.
  7. Mix and Adjust Flavors:

    • Stir well to ensure that all the ingredients are evenly coated with the sauces. Adjust the seasoning if needed.
  8. Finish and Serve:

    • Continue to cook for a few more minutes until the flavors meld together and the tempeh and chicken skin are well combined with the spices. Turn off the heat.
  9. Serve:
