Ingredients

Ingredient Quantity
Tempeh (cut into cubes) 1 block (approx. 250g)
Firm tofu (cut into cubes) 4 pieces
Red shallots (sliced) 3 cloves
Garlic (smashed and chopped) 5 cloves
Bird’s eye chilies (sliced) 7 pieces
Galangal (smashed) 2 cm
Bay leaf 1 leaf
Kaffir lime leaf 1 leaf
Palm sugar 30 g
Sweet soy sauce 2 tablespoons
Water A little (about ½ cup)
Sugar ½ tablespoon
Salt ½ tablespoon or to taste
Flavor enhancer (optional) ¼ teaspoon
Cooking oil For frying

Instructions

  1. Prepare the Tofu:
Begin by frying the tofu in a pan with hot oil, just until golden brown. It’s essential not to fry it until it’s completely dry, as you want the tofu to absorb the flavors of the sauce later on. Once done, set the fried tofu aside on a plate lined with paper towels to absorb excess oil.

  2. Cook the Tempeh:
In the same pan, fry the tempeh until it reaches your desired level of crispiness. If you prefer a crunchier texture, allow it to fry a little longer. Once finished, remove and set aside with the tofu.

  3. Sauté Aromatics:
In the same pan, add a bit more oil if necessary, then sauté the sliced shallots, chopped garlic, and sliced chilies. Stir-fry them for a few minutes until they are fragrant and the shallots have softened.

  4. Add Spices:
Incorporate the smashed galangal, bay leaf, and kaffir lime leaf into the pan. Continue to stir-fry until the mixture becomes aromatic.

  5. Combine Tofu and Tempeh:
Gently add the fried tempeh and tofu into the pan with the sautéed aromatics. Pour in approximately half a glass of water to create a sauce. Follow this by adding the sweet soy sauce, palm sugar, salt, and optional flavor enhancer. Mix everything well to ensure the tofu and tempeh are coated in the flavorful sauce.

  6. Adjust Flavor:
Taste the sauce and adjust the seasoning as needed. You can add more sugar, salt, or soy sauce depending on your preference.

  7. Simmer:
Allow the mixture to simmer until the water reduces and the sauce thickens slightly, enhancing the flavors of the dish.

  8. Serve:
Once the sauce has thickened to your liking, remove the pan from the heat. Arrange the Tempe Tahu Kecap Pedas on a serving plate, and it’s ready to serve. Enjoy this delightful dish with steamed rice or as part of a larger meal!
